Birchrun Bleu (Birchrun Hills Farm, Chester Springs, PA) Goat, Raw • Semi-soft blue cheese. Mild, sweet and peppery. Creamy with delicate blue cheese flavor.
Aged Seven Sisters (The Farm at Doe Run, Coatesville, PA) Cow, Raw * Aged 12-24 months. A cross between Alpine and Gouda. The cheese is aged in stone caves located below the dairy farm. Firm, with a natural rind. Its flavor starts with sweet milk, moves to a butterscotch and nutty taste with a pinch of herbaceousness. Best paired with light ales and beers, as well as dry ciders.
