Aged for 2 months. A mixed milk bleu inspired by the classic French Roquefort.

 ***Springdell***   (The Farm at Doe Run, Unionville, PA)

 * Cow/Goat, Pasteurized *

A seasonal Gouda/Alpine hybrid made with a mix of cow and goat’s milk. Creamy texture with caramel and nutty flavors. The aging process makes it crystalline and dense with tons of flavor. Great for beer pairing with an IPA, porter, or pale ale.

 *** Hudson Valley Camembert***   (Old Chatham Creamery, Groton, NY)

* Sheep/Cow, Pasteurized *

Soft ripened blend of sheep’s milk, cow’s milk, and cow’s cream.

Served with house-made jams, Green Meadow Farm raw honey & seasonal fruit, our house-made pickles & pickled mustard seed.

Lion's Mane Mushroom Cake     15

This umami-laden mushroom patty (lion's mane & combs tooth mushrooms from Mycopolitan) resembles a crab cake in appearance and texture, but the flavor is all earth. Pan seared and served over a bed of local, lightly dressed baby arugula. Topped with our samurai sauce made with house mayo, sambal, and créme fraiche.

Smoked Trout Dip     11

Spanish Flies     15

Incredibly hot chicken wings w/chipotle pepper sauce that are not for the faint of heart. They aren't those wimpy 'buffalo wings' - these babies are incendiary!  HOT! HOT! HOT! Did I mention that they're HOT? We do offer barbecue sauce for the less adventurous. Served with a side order of our famous frites
